New Potatoes with Onion and Dill
Ingredients
2 lbs. small new red potatoes, quartered
1/4 cup finely chopped onion
3 tablespoon butter
1 tablespoon chopped fresh dill
1/4 teaspoon salt
1/4 teaspoon pepper
Preparation
Boil or steam potatoes over medium high heat until water comes to a full boil until potatoes are fork tender; drain. In a skillet, cook onion in butter until translucent; add dill and salt and pepper. Return potatoes to pan. Cook over medium heat, gently stirring occasionally, until coated and heated through.
Herb Potato Pie
Ingredients
6 large potatoes (or approximately 6 cups sliced)
4 cloves garlic minced
4 shallots chopped
3 tablespoon fresh parsley
1 tablespoon fresh herbs (thyme, rosemary, sage, basil, oregano…pick one)
1 cup asiago cheese
4 tablespoon parmesan cheese
1 cup chicken or vegetable broth
salt and freshly ground pepper
Preparation
Preheat oven to 350°F. Slice potatoes into 1/8 inch slices. Coat a 9 inch round baking dish with butter. Slightly overlap potato slices in the bottom to form a spiral. Combine asiago cheese, garlic, shallots, parsley, salt and pepper in a small bowl. Sprinkle 1/3 of this mixture over the potatoes. Add two more layers of potatoes and cheese. Pour broth over to cover potatoes. Sprinkle with parmesan cheese. Bake for 40 – 45 minutes or until potatoes are tender. Cut into wedges and serve.
